World Famous Hyderabadi Chicken Dum Biryani

Hyderabadi Chicken Dum Biryani is equally famous all over the world, Because of its unique spiciness, cooking method and ingredients. Its cooing involved 3 Basic Steps, Marinating, Rice Boiling and Dum. Lets Start with ingredients we need to cook Hyderabadi Chicken Dum Biryani:


3 Cups Basmati rice (preferably aged)

1 kg Chicken

½ to 1 tsp Biryani Masala

2 to 3 large Onions chopped

8 tcp chopped Coriander leaves

8 tsp Mint chopped

8 tsp Oil

4 tsp Ghee

½ tsp Saffron stranded (Ignore it if not available)

For Marinating:

2 tsp Ginger Garlic paste

1 tsp Turmeric

4 Green chilies slit

3 to 4 cup Yogurt

2 tsp Lemon Juice

2 tsp Red Chili powder

2 tsp Biryani Masala

1 tsp Green Cardamom/Elaichi powder

2 tsp Salt

Spices for Rice:

Double the water with rice 6 Cup with 3 Cup Rice

2 tsp Salt

2.5 tsp Oil

4-inch Cinnamon/Darchini piece

8 Cloves/Laung

7 Green Cardmom/Elaichi

3 Bay Leaf/Tejpatta

2 black Cardmom/Kali Elaichi

1 tsp Caraway Seeds/Shahi Zeera

Preparation For Cooking:

Blend all spices

Blend all Spices with blender

Roast onion

Roast Onion till it change color to Brown


1 Chicken Marination:

Add chicken and spices

Mix all spices in Chicken

Add yogurt

Put yogurt and mix it well by hands

Add coriander

Mix coriander, mint leaves

Ensure that all chicken pieces should be marinated well, now put it in refrigerator for 15 mints.

2 Boil white Rice:

1: Wash rice till water runs clear

2: Soak it for 20 mints

3: Strain/Drain it with strainer/drainer

4: Boil 8,9 cup water

5: Add all spices and 2.5 tsp oil

6: When steam releases add rice

7: Cook rice 3/4 0r 75%

8: Strain/Drain rice with strainer/drainer

(Make Sure rice cooked aprox more then half because we have to put it on DUM)

Now our chicken has been marinated well and rice ready also to move on final step “Dum”

Preparation for Hyderabadi Dum Biryani Final Step “DUM”

How to prepare for dum

1: Add oil layer in a heavy bottom pan casserole

2: Transfer marinated chicken

3: Sprinkle half Coriander and mint leaves over half chicken

4: Put 75% boiled rice

5: Sprinkle half brown fried onion

6: Sprinkle Coriander and mint leaves over chicken

7: Sprinkle masala powder, remaining fried onion, coriander and mint leaves

8: Pour the saffron mixed in milk (use food color if saffron not available)

Put the biryani on dum

Cover the casserole or pan to trap steam as steam not releases from anywhere


1: Place it on a hot grill or tawa, and cook it on medium flame for 20 mints

2: Reduce the flame to lowest and cook for 10 more mints

3: Garnish Biryani with chopped coriander and mint leaves

4: Perfect tasty Hyderabadi Chicken Dum Biryani is ready now, serve it with Raita
